Thai-Style Purslane Salad
This Thai-style purslane salad is the perfect thing to make with a small bunch of wild or store-bought purslane!
Either enjoy it on its own for lunch, or serve it as part of a large Thai-themed meal.

Ingredients
- 2 tablespoons lime juice
- 1 tablespoon vegetable oil
- 1 tablespoon fish sauce (or coconut aminos for vegetarian)
- 1 teaspoon white sugar
- 1 garlic clove, minced
- 3.5oz (100g) purslane, washed and torn into bite-sized pieces
- 1/2 English cucumber, sliced
- 1 tomato, cut into wedges, or a handful of cherry tomatoes
- 2 shallots, or 1/4 red onion, sliced
- 1 red or green chili, sliced
- 1/4 cup chopped peanuts
Preparation
In a medium bowl, mix together the lime juice, oil, fish sauce, sugar, and garlic.
Add the rest of the ingredients and toss well.
Serve immediately. Enjoy!
