Hop Shoot Risotto – Risotto con Bruscandoli

This spring-time delicacy uses one of the world’s most expensive vegetables… luckily hop shoots can be found growing wild in urban areas where you can pick them for free!

- 10oz (300g) fresh hop shoots
- 2 tablespoons butter
- 1 medium onion, diced
- 10oz (300g) Arborio rice
- 1 cup white wine
- 4 cups chicken or veggie stock
- Kosher salt
- Black Pepper
- Freshly grated Parmesan Cheese
Preparation
Wash the hop shoots and chop them up into 1-2 inch pieces.
Melt 1 tablespoon of the butter in a skillet over medium heat. Add the onion and cook, stirring, until softened and translucent.
Add the rice and sauté until grains become opaque and begin smelling toasty.
Add the wine and cook until mostly evaporated.
Add the hop shoots and 1 ladleful of the stock.
Reduce heat to medium-low.
Let the stock mostly evaporate and then add another ladleful of the stock.
Continue doing this for 20 minutes, reducing the heat if the stock bubbles vigorously when it hits the skillet.
Once the stock is used up and the rice is soft enough to eat, stir in the other tablespoon of butter and season to taste with salt, pepper, and grated Parmesan.
Serve with more grated Parmesan on top. This dish goes great with lamb. Enjoy!
