Fancy Mortadella Salad with Cherries, Pistachios, and Ricotta
This fancy mortadella salad with cherries, pistachios, and ricotta is the just what you need for a light, healthy, and delicious meal!

Ingredients
- 2 tablespoons good extra virgin olive oil
- 1 tablespoon high quality white wine vinegar
- 1 teaspoon water
- 1 teaspoon honey
- 1/4 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
- 2 tablespoons minced fresh mint leaves
- 3.5oz (100g) arugula
- 1 cup sugar snap peas, sliced thinly
- 5oz (150g) cherries, pitted and halved
- 2 tablespoons chopped pistachios
- 1 cup smooth ricotta, labneh, or mascarpone
- 5 thin slices mortadella
- Warm baguette to serve
Preparation
Mix the oil, vinegar, water, honey, mint, salt, and pepper in a bowl.
Artfully arrange the rest of the ingredients on a large plate or platter. Add edible flowers to make it extra fancy!
Drizzle over the dressing and serve with warm crusty bread. Enjoy!
