Cherry Tomato Summer Salad
This simple summer salad is as delicious as it is beautiful. Be prepared to be wowed by just how much punch it packs!
MSG is totally optional here, but a small pinch will really elevate things, as will the sherry vinegar; though white wine vinegar will do if you can find any.

Ingredients
- 2 pints cherry tomatoes, each cut into 2 or 3 pieces
- 1 small shallot, finely minced
- 1 teaspoon white sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon MSG (optional)
- 2 tablespoons good extra virgin olive oil
- 2 tablespoons sherry vinegar
- 2 tablespoons minced fresh mint leaves
Preparation
Slice the cherry tomatoes into 2 or 3 pieces with a sharp knife.
Mix the shallot, sugar, salt, MSG, olive oil, and vinegar in a medium bowl.
Add the tomatoes and toss well.
Let marinate for 15-30 minutes.
Add the minced mint leaves, let sit for another 5 minutes, then serve. Enjoy!
