Shrimp of the Woods and Cherry Tomato Toasts
Sometimes when I go foraging for mushrooms, I come back with a bounty that I can hardly eat my way through. Other times, I come home with nothing but a handful, which was the case when I found these shrimp of the woods mushrooms, also known as aborted entoloma.
What to do with a single handful of mushrooms?
Make mushroom toast!
This is a very loose recipe and should be easy and uncomplicated. If you have more than a handful, simply expand the recipe and make more toasts.
If like me, you only have a small amount, make yourself a nice a little lunch wth them; you won’t regret it!

Ingredients
- 1 handful shrimp of the woods, cleaned and cut into bite-sized pieces
- 1 tablespoon butter, ghee, oil, or bacon grease
- 1 handful cherry tomatoes
- 1 handful greens (spinach, mizuna, nettle, etc.)
- Salt
- Pepper
- Bread
- Butter
- Fresh herbs for garnish (optional)
Preparation
Heat butter/ghee/oil/grease in a skillet over medium high heat. Add the mushrooms and sear for a few minutes.
Add the tomatoes and cook until they burst.
Add greens and a pinch of salt and pepper.
Toast bread, butter it, top it with the mushroom mixture, garnish with fresh herbs if you like. Enjoy!
