Kohlrabi Som Tam Salad
This is a great solution for what to do with a CSA basket full of kohlrabi!
This kohlrabi som tam salad is a take on the traditional Thai salad made with unripe papaya. Kohlrabi manages to stand in effortlessly and green apple adds the appropriate amount of sourness.

Ingredients
- 3 cloves garlic, minced
- 1-2 bird’s eye chilies, minced
- 1 tablespoon cilantro stems, minced (optional)
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (or coconut aminos for vegetarian)
- Juice from 2 limes
- 1/2 cup cherry tomatoes, quartered
- 2 large kohlrabi (or 4 small), peeled and julienned (cut into long matchsticks)
- 1 green apple, peeled and julienned
- 1 small carrot, peeled and julienned
- 1 green chili, sliced
- 2 tablespoons peanuts, roughly chopped
Preparation
Add the garlic, chilies, cilantro stems, brown sugar, soy, fish sauce, and lime juice to a large bowl. Mix well.
Add the tomatoes to the bowl and use a wooden spoon to lightly smash them into the dressing. Add kohlrabi, apple, carrot, green chili, and peanuts and gently smash with the spoon, mixing everything together. Serve immediately.
