Stir Fried Cucumbers

Ingredients
- 1 English cucumber, sliced into thin rounds
- 1/2 tablespoon kosher salt
- 1 tablespoon vegetable oil
- 1 large clove garlic, minced
- 1 green onion, sliced thinly
- Pinch of roasted sesame seeds (optional)
Preparation
Toss the sliced cucumbers with the salt, gently massaging it into the cucumbers with your fingers.
Let sit in a bowl or strainer for at least 10 minutes.
Working in batches, grab a handful of the cucumbers and give them a firm squeeze, discarding any juices that come from them.
Heat the oil in a wok or frying pan on high and add the garlic.
Stir fry the garlic for about 1 minute, then add the squeezed cucumbers and the sliced green onion.
Keep tossing and stirring everything around until the garlic infused oil is covering every cucumber, about 1-2 minutes.
Dump the cukes into a bowl and sprinkle with sesame seeds to serve. Enjoy!
